21 Day Summer Challenge~ Day 14: Summer recipe

 
June 23-Day 14: Summer recipe
 
Yikes!
I really don't like to cook!
I am sure I must have a favorite recipe.
But... I'm not sure I know what it is.
I think it is when hubby BB Q's or cooks.
I think I must run into my kitchen and find that favorite recipe.
Actually hubby really likes my salads I make as does my oldest daughter.
I make a very yummy chicken salad.
I don't follow a recipe except whats in my head and the refrigerator.
So it can change each time not two every a like.
So if I had to write the recipe it would most likely go something like this:
 
1 head of cleaned lettuce chopped
2-3 shredded carrots
1 cucumber sliced
6 mushrooms sliced
3 celery sticks diced
5-6 radishes sliced
2 tomatoes diced
Some shredded red cabbage
1/2 red pepper diced
 
1 package of skinless chicken strips cut up in bite size
Cook in olive oil
Dice up some red onion
Dice up some walla walla sweet onion
salt & pepper
Lemon
4-5 cloves of finely diced garlic
Cook until crystal glazed brown
 
Grated sharp cheese
2 avocados sliced
Hard boiled eggs sliced
 
Mix salad all together
Lay chicken on top
Sprinkle with grated cheese
lay avocados and eggs on side of plate around for garnish.
 
Dressing whatever you prefer.
I like homemade balsamic vinegar and oil with Greek seasoning in it
with a bit of red wine.
 
Served with sparking water
Dessert fresh fruit of the season

Wow!! I have to say this sounds like a great recipe!! It didn't seem hard for you at all!! I understand this topic was actually hard for me too! I guess that's why it's called a challenge! Thanks for sticking with it! I've enjoyed your posts and getting to know you!!
